Rotisserie
Rotisserie grilling, also known as spit roasting is a method wherein the meat is skewered on a spit and slow cooked over or in a source of heat. The spit is usually a long metal rod which has been skewered through the food to hold it while it’s being cooked. Often times forks or prongs are attached to the spit to keep the food in place.
Outdoor sources of heat for rotisserie cooking include gas grills, charcoal grills, and campfires. Indoor sources of heat include fireplaces as well as anything ranging from a small convection oven with a single spit, all the way up to large industrial ovens containing multiple spits. If you’ve been to Costco lately, you’ve probably seen the industrial size ovens. They’re hard to miss. And there’s a lot of whole chickens in those ovens.
Speaking of Costco, the wholesale retail giant is well known for how much rotisserie chicken they sell throughout their seven hundred and fifty stores. The workers are continually adding and removing whole chickens from the spit while customers snatch them up for purchase.
Rotisserie grilling is excellent for cooking large cuts of meat or even entire animals depending on the size of the rotisserie grill. Typical choices include ribs, lamb, ham, fish, vegetables and kabobs, whole turkeys, and of course…whole chickens.
The reason they sell so many is that they keep the price very low and actually sell them at a loss. So I’ve been told. This is because it attracts people to come into the store and hopefully purchase something else more expensive while they’re there.
Rotisserie grilling is a slow process but also a stress free way of cooking. Once the food is secure on the rotating spit, you can move on to other things. No need to worry about flipping or rotating anything.
The only thing you need to worry about is making sure the correct cooking temperatures are maintained. As the spit turns, it slowly rotates the food, cooking it evenly and allowing the food to baste in its own juices. If your rotisserie comes with a drip/drippings pan, you can even do some additional basting if you choose. In the end you’re virtually guaranteed to be rewarded with a whole chicken or whatever other type of meat you’re cooking that’s mouthwateringly juicy and delicious!
