Horseradish Dressing on Asparagus

Tomatoes with Fresh Horseradish Dressing

I first tried this idea, very successfully, on grape tomatoes.

I kid you not, when I made this recipe a child in our daycare nearly ate an entire pound of asparagus, horseradish dressing and all.

If you like horseradish you will love the simple flavor of this dish. If you think you might like horseradish if it wasn’t so darn hot that this recipe is definitely for you.

Fresh Horseradish Dressed Asparagus

Serves:4-6


Ingredients:

  • 1 pound of asparagus, chopped into 2 inch segments
  • 1/4-1/3  cup fine grated fresh horseradish (a small, fist sized, trimmed radish piece)
  • 1 cup white cooking wine
  • 1/4 t salt
  • 1/4 t pepper
  • optional: cayenne pepper to taste

Directions:

  1. In a wide pot add the asparagus, grated horseradish, wine, salt, pepper, and optional cayenne.
  2. Cover and bring to a simmer over medium for 10 minutes, until asparagus is kelly green and tender, but not mash-able.
  3. Serve with a crusty bread for sopping up juices.
