Having had no microwave for the last 13 years this probably the ONLY recipe on this site to-date that requires one. Why? As we have been traveling full-time in the RV there have been a few things we’ve had to change – namely the fact that we have no oven. For the most part this isn’t an issue. We really don’t bake a lot. We generally don’t do casseroles, are not into cookies and cakes, and have yet to master the art of decent bread, so outside of a major lack of good pizza and roasts we have been fine without an oven. That being said, a certain Mr. Nathan just had his 8th birthday and I knew it would not be complete without a frosted birthday cake! This was, however, easy enough conquered with the now, oh so familiar, microwaved cake in a cup concept.

 

Nathan LOVED IT! He thought it was best thing ever and completely brilliant. Having never had a microwave before he didn’t even know it was possible!

Frosted Birthday Cake in a Mug

Cake in a mug is SO easy to make, and here, the use of the real dark chocolate makes it extra special, with a dash of cinnamon to make it super scrumptious!

Equipment

  • Microwave

Ingredients
  

  • 5 tbsp all purpose flour
  • 3 tbsp white sugar
  • 3 tbsp vegetable oil
  • 3 tbsp milk
  • 1/3 oz 90% dark chocolate/baking chocolate
  • 1/4 tsp baking powder
  • 1/8 tsp vanilla extract
  • dash cinnamon extract
  • pinch salt

Instructions
 

  • Use a spoon to mix together all the frosting ingredients, whipping and turning to soften and incorporate. Set aside.
  • If using hard chocolate, heat it in the mug for 30 – 40 seconds in the microwave to soften/melt.
  • Add the other dry ingredients to the softened chocolate, right in the mug, and mix well.
  • Add the wet ingredients and stir well with a spoon.
  • Microwave on high for one minute and ten seconds to one minute and forty-five seconds – until cake has risen and an inserted toothpick comes out clean.
  • Frost the top of the cake, having additional frosting available as desired to add while eating through the cake. HAPPY BIRTHDAY!
