Cacao Nibs. They are all the rave, along side goji and acai berries. I purchased a little bag of each quite a while ago, looking for some hooty-snooty idea to make. When I found that Alton Brown had made a recipe for a ‘Chocolate Dressing,’ hailing all children for ovation, I said, “NEY! ‘Tis for the Mamas!”
This recipe replaces the balsamic dressing with a more grown-up Marsala Cooking Wine. And no playing around here! We want a low fat dressing for our healthy diet!
Ladies and Ladies, what I have for you below is just that. May I present to you ‘Marsala Cacao Nib Dressing!”

Cacao Nib Dressing with Marsala Cooking Wine

Serves:6-8
Ingredients:
- 1 T olive oil
- 4 t ground cacao nibs, as fine as possible*
- 1/2 cup Marsala cooking wine
- 1/8 t cayenne pepper
- 1/4 t sugar
*You can use a spice grinder, bullet, or food processor. Try to get it as fine as possible, as the nibs are not sweetened and can come across as very bitter in larger pieces.
For The Salad:
- mixed baby greens of choice
- strawberries, chopped into small cubes
- slivered almonds
Directions:
- Add the oil and ground cacao to a small saute pan over low heat for 3-5 minutes until aromatic of chocolate.
- Add the cooking wine, cayenne, and sugar, and bring to a gentle simmer over medium heat for 5 minutes, until the alcohol has boiled off and flavors have melded.
- Let cool and serve over favorite greens, topped with strawberries and slivered almonds.
