Strawberries, Pine Nuts, and HoneyAlthough only given literately 5 seconds or less of attention on the air with Anthony Bourdain in Tangier, ‘Strawberries, Pine Nuts, and Honey’ pinged so loud on my foodie radar, “Make It! …Make It! …Make It!” that instead of having a song stuck in my head I pretty much heard this:

….from the moment I first saw the recipe, until I finally had the chance to make it.

Since then I have brought this healthy and super, super, super easy dish to Easter diner, served it as dessert for a special anniversary dinner, shared it with my bible study group, and am unabashedly making requests for it on Mother’s Day. (With the mandatory addition of blue cheese crumbles.)

The best thing about it is that Nathan can literally prepare this dish himself. Any child, even quite young, with a plastic lettuce knife would be able to make this very healthy dish themselves to bring on their next turn for snack at school.
Strawberries, Pine Nuts, and Honey with Blue Cheese

Strawberries, Pine Nuts, and Honey

Serves: 2-4


Ingredients:

  • 12 large strawberries, chopped, about 2 cups
  • 1/4 cup pine nuts
  • 2 t honey
  • 1/4 cup crumbled cheese, blue or feta – Optional

Suggestions: If you happen to have made Cacao Nib Dressing recently and have some left-over ground nibs on hand, this might be a great recipe to add them. Fresh mint might also make a great garnish.


Directions:

  1. Chopped the strawberries into small, roughly even pieces.
  2. Gently stir the pine nuts, strawberries, and honey together in a bowl.
  3. Top with the cheese crumbles as desired.
