Bourbon Braised Red Onions

Red Onion and BourbonThis recipe was created when I was working on the beet and oranges recipe a month ago. Not only were they fantastically incorporated into that recipe, these onions are perfect as a topping for sandwiches, hotdogs, hamburgers, or pork chops. Serve them cooled with the sauce as a dressing over romaine for a salad, or chop the onions fine and you have a sweet relish that can be used in meatloaf. You can even serve it as a side dish alone. They truly are sweet enough for children to eat.

Chicken Breast Sandwich with Bourbon Braised Onions and Fresh Horseradish

Sweet Bourbon Braised Red Onions

Serves:4-6


Ingredients:

  • 1 medium red onion, halved and sliced
  • 1/2 red wine vinegar
  • 3 T honey (or agave)
  • 1/2 cup bourbon

Directions:

  1. Very simple: add the sliced onion, red wine vinegar, honey, and bourbon to a sauce pan or skillet over medium heat.
  2. Allow to simmer for approximately 7 minutes, to reduce. Toss regularly as to not brown the onions.
  3. Serve the onions as a topping and the sauce as a dressing as desired. You can double the vinegar, honey, and bourbon for additional sauce as needed.
